The osso buco alla Milanese, as the name suggests, is a typical recipe from the city of Milan.
Very easy to cook and very tasty.
We do not know exactly when the osso buco is joined Milanese food, but we do know that in the 700 was already one of the typical dishes and was considered a gourmet dish.
meat soup (from chicken)
onion, carrot, celery, some leek if you like, a pinch of marjoram and a if you like a clove of garlic. I don’t use garlic to make it more digestive!
butter and extra virgin olive oil
marrowbones (1 per person)
onions or shallots
flour (to flour the meat and to make the sause meat more creamy, if necessary)
two tablespoons of tomato sauce.
