A healthy dinner: Sea Bream Salted Fish
Cook with salt is one of the oldest techniques. Cooking salt collecting cross-party consensus, both between the cook (has fans in the home, in restaurants and gourmet restaurants) and among those who eat (like the unrepentant foodies and forced diets).
For as this is one of the best healthy tecnique to cook because it is not added even one calorie of food that is prepared.
Ingredients: 2 sea fish of 500 gr each
4 kg of grain sea salt better if it is from Mothya, Sicily
organic herbs as you like
1 lemon and organic olive oil
1 sea Bream or similar
1) Garnished and mix the grain salt with favorite flavors (here at Fontanaro we like to use our organic herbs such as thyme, marjoram…)
1) Cover the bottom of a baking dish with this mixed salt
2) Use a very fresh sea fish with all the skin and even better with the scales. Inserted inside the fish your favorites aromatic herbs and some lemon or lemon zest. Put the fish in the baking dish and well cover all with the salt.
4) Break the salt crust, clean te fish and serve immediately with home made organic mayonnaise based of Organic Olive Oil il Fontanaro, not butter!!!
In order to keep the crosta strong, you can add egg whites, perhaps with a little ‘flour, mixed with the grain salt.
Our way is half hour per 1/2 kg of fish.
