Organic green bean pasta at Fontanaro recipe:
- home made bread crumbs
- 2 anchovies
- 1 glove of garlic
- 500 gr. of organic green beans
- vintage 20 years Parmesan Cheese
- 400 gr. of Pasta di Gragnano
- organic extra virgin olive oil
- 6 cherry tomatoes
- sea salt
In a sauce pan heat 2 spoons of extra virgin organic olive oil and toast bread crumbs with a glove of garlic together with 2 anchovies.
Boil washed organic green beans in a pasta pot with 2 spoon of seas salt. And after that use the same water to boil the pasta.
In a blender mix half of the green beans with basil, organic extra virgin olive oil and parmesan cheese – make a cream (you can add some of the boiled green bean water).
Sauté the rest of the garlic with organic extra virgin olive oil, add the rest of green beans and the cherry tomatoes cut in two.
Cook the pasta 2 minutes less than the time indicated.
Dry the pasta and cook it 5 minutes in the sauce pan with tomatoes and green beans, add the green beans cream.
Serve the pasta and sprinkle with toasted bread crumbs.
