Please don’t call it Bolognese sause if you have an italian friend….
Put vegetables in a blender to chop finely, then softeeeen in the organic olive oil in a wok or a big frying pan. (heavy not the uncosty ones from the supermarket). (10 minutes)
Add bacon after cutting with a knife.
Turn heat and add all mince, stirring in until all browned.
Add the meat and when it turn brown (10 minutes) add the half glass of a good dry red wine
When the wine dry add the tomato puree.
Cook for 2 hours minimum
Add hot broth as necessary and cook over low flame until rich.
