The Caprese is a gluten free cake from the island of Capri.
The Caprese – Ingredients:
300 gr almonds lightly toasted and chopped. One half chopped finely, the other more coarsely
250 gr sugar
250 gr butter
250 gr dark bitter chocolate 80% or more
The Caprese – Method:
Beat the butter that should be at room temperature. Soft but not melted.
Add half of the sugar.
Separate the yolks from the eggwhites and add one yolk at a time to the mix.
With wire whisk.
This step is important because both the butter and the yolk contain fats and the yolks must be incorporated one at a time carefully so that they don’t separate.
Then to all these ingredients that give the mix its fragrance, add (while continuing to beat) the chopped almonds and the chocolate melted, previously on a double boiler.
Finally beat the egg whites in soft peaks and add the egg whites and remaining sugar to the mixture.
Butter and coat a 24/25 cm pan with powdered dark chocolate.
Preheat oven to 350 degrees.
Bake in 350 degree oven for one hour.
It is also possible to make individual caprese cakes using cupcake molds.
You can serve it with italian gelato also!
