Potacchio Chicken is a very simple recipe from le Marche Region.
A big organic chicken
Organic extra virgin olive oil
Fresh rosemary as much as you like
One glass of wine
1 small basket of small tomatoes
This morning we went to the butcher in Po Bandino, Mr. Ansano and we’ve bought a big wild chicken for our cooking class.
First of all we have to clean it from the interiors and cut in big pieces.
We sauté our chicken with organic olive oil and added one onion cut in pieces, fresh rosemary from the garden and two cloves of garlic cut in big pieces. Have the temperature at a medium to low heat.
Add a glass of good dry white wine to the chicken with herbs and turn up the heat to high to dry out the alcohol .
Add the small tomatoes cut in two.
Cook for 40 to 50 minutes, when is almost ready put it in the oven at the 340 Fahrenheit to dry the liquid for about 20-30 minutes.
