Italin Baby food part 1
1 kg of yellow potatoes, better old not new, not spring potatoes
300 gr of Organic Flour n.1 (more or less, it depends on many factor like quality of potatoes, of eggs and flour)
1 organic egg
no salt for kids….
My daughter 1,6 years old already make her own Italian baby food, gnocchi!
Boiled the potatoes until they are very cooked. (From the moment the water is boiling, count about 30-40 minutes, depending on their size).
Drain them very well. Peel them while they are still hot and immediately crush them on the flour that you will have poured on a pasta board. Then add the lightly beaten organic egg .
Knead everything with your hands until you obtain a soft but compact dough. Remember that if you work too hard, the gnocchi will become hard during cooking, so just mix the necessary dough.
Cover the dough with a kitchen towel to prevent it from drying out.
Roll gently the daugh and make the flower shape or make rolls that you can cut as regular gnocchi!
