Here we are with another recipes from our family cooking classes here in Umbria.
Rice with with fresh veggies.
Now in May we have great flowers zucchini, zucchini and local onions and organic tomatoes from Sicily.
- 50 gr of Carnaroli rice. We like Carnaroli Acquarello.
- some natural sea salt
- flower zucchini
- 2 zucchini
- 6 cherry organic tomatoes
- Extra virgin organic olive oil
- hot water
- Parmigiano Reggiano, no Parmesan cheese (NO KRAFT)
Cut finely all the veggies, the smaller that you can. Heat some EVO oil in a heavy custom iron sauce pan and when it is hot add the rice and toast it for few minutes, than add the veggies.
When you see the rice very dry add some boiling spring water. Cook for 15-18 minutes. Add some more hot water and parmigiano reggiano in order to make the rice creamy, we say “al salto!”.
If the rice is for an adult you can add black grain pepper!
To serve hot! You can shape it on a tea cup and than reverse it on the serving plate after few minutes.
