Dried pasta (macaroni) ½ kg
10 fresh peeled tomatoes
Extra virgin olive oil (3-4 table spoons)
Some fresh mint leaves
Grated pecorino or parmesan cheese
On a pasta pan put water to boil
In the meantime put the oil to heat and add the peeled tomatoes cut in pieces and fried with high temperature for about 8’
Cook the pasta al dente. Drain the pasta and put in the saucepan where you have fried the tomatoes with the mint.
