Pasta alla puttanesca is a very easy pasta you can do for lunch or dinner. Please do not reapet puttanesca away from the kitchen…puttana in italian is a bad word to describe a prostitute….
Ingredients, for 6 people
600 g of spaghetti from Gragnano if it is possible
3 tablespoons extra virgin olive oil
if you like use also 4 anchovies
1 onion, sliced fine
200 g of black olives, pitted
a tablespoon of salted cappers washed
600 g of organic tomatoes peeled and cut into strips or
6 tablespoon of chopped parsley to use also to decorate the dishes
a nice variation is to add also some grilled organic tomatoes to decore each dish, but not necessary. How to make grilled tomatoes: cut tomatoes in 2 and grill (with basil, bread crumbs, garlic and olive oil)
20 minutes for the preparation + 10 minutes cooking
Put on the fire a large frying pan and let heat together the organic olive oil oil, then add the finely chopped onion and anchovies and previously pounded in a mortar or finely chopped.
When the onion begins to brown and the anchovies melt, add the olives, pitted and cut in half, capers and chopped tomatoes peeled and filleted.
Fate then season the sauce over high heat for a few seconds, stirring constantly.
Meanwhile, cook the spaghetti in salted water, drain and place them in the frying pan and cook another 1 or 2 minutes.
Then cover set the plates with the pasta and sprinkle with parsley.
