Onion & Sage Pizza

A traditional rustic flatbread from Umbria, this savory recipe is scented with sweet onion and fresh sage. Simple and unforgettable.

Ingredients – For 4 People:

  • 500 g organic “00” flour

  • 25 g fresh brewer’s yeast

  • 2 tsp organic cane sugar

  • 1 tsp sea salt

  • 125 ml lukewarm mineral water

  • 2 tbsp organic olive oil

    Instructions:

  1. Dissolve the yeast in lukewarm water with sugar. Add to flour with salt and olive oil. Knead for 10–15 minutes.

  2. Form a round loaf, carve a cross on top, and let rise in a floured bowl covered with a cloth for 2 hours.

  3. Roll into a thin layer and place in a greased baking dish.

  4. Top with sliced organic onion and sage leaves sautéed in a little olive oil (or raw).

  5. Bake at 220°C for about 15 minutes until golden.
